About salt from Guérande The Guérande salt roots go far back in history, it has been harvested on the peninsula since the iron age.   The current exploitation technique go back to before the 9th century and only fives salinas of the Carolingian era are still in operation on the marsh. This specific tradition of salt-making and the preservation of the skills have allowed the marshes of Guérande to survive thourgh to modern times.
